OG from 2018, it defined what "non-fungible" means. Every token has unique ID and one owner. Used for PFP collections, generative art, 1/1 pieces. It has two sub-standards worth knowing:

▪ ERC-721A: Chiru Labs developed this for Azuki mint. Allows batch minting at lower gas costs (think: minting 5 NFTs for ~1x gas instead of 5x)
▪ ERC-721C: Adds creator controls, letting artists enforce royalties at smart contract level (but its adoption has been mixed).

✦ 𝗘𝗥𝗖-𝟭𝟭𝟱𝟱: 𝗧𝗵𝗲 𝗦𝘄𝗶𝘀𝘀 𝗔𝗿𝗺𝘆 𝗞𝗻𝗶𝗳𝗲
Originally created by Enjin for gaming, ERC-1155 is like having both fungible and non-fungible tokens in one contract. Imagine creating 1000 identical swords (fungible) and 1 unique legendary sword (non-fungible) in the same collection. It is cheaper to create, mint and batch send to many people so is now the most used standard for gaming items, open editions, large scale SBT NFT badges etc.

✦ 𝗘𝗥𝗖-𝟰𝟬𝟰: 𝗧𝗵𝗲 𝗘𝘅𝗽𝗲𝗿𝗶𝗺𝗲𝗻𝘁𝗮𝗹 𝗛𝘆𝗯𝗿𝗶𝗱
This got famous last year with $PANDORA token, attempts to merge NFTs with fungible tokens. The idea: your NFT can be "fractionalized" into fungible tokens that trade like regular cryptocurrencies. Buy enough tokens? They automatically combine into an NFT. Really fun but very few projects used this well so far (I would lOVE more).

✦ 𝗔𝗿𝗲 𝗦𝗕𝗧𝘀 𝗮 𝗦𝗲𝗽𝗮𝗿𝗮𝘁𝗲 𝗧𝗼𝗸𝗲𝗻 𝗧𝘆𝗽𝗲?
Most SBTs are ERC-1155 or ERC-721 with a "turned off" transfer function. However, the Ethereum community has introduced ERC-5114 & ERC-5484 as proposed standards for special non-transferrable tokens with additional functions (consensual burning etc) that help make SBTs more useful (again, adoption is the problem here).

✦ 𝗪𝗵𝘆 𝗔𝗿𝗲 𝗧𝗵𝗲𝗿𝗲 𝗦𝗼 𝗠𝗮𝗻𝘆 𝗧𝗼𝗸𝗲𝗻 𝗦𝘁𝗮𝗻𝗱𝗮𝗿𝗱𝘀?
Different use cases need different features. Theoretically, anyone can create a new token standard (and there are HUNDREDS). The main problem is their adoption = this is why 99% of NFTs you see will be simply ERC-721 (for PfPs) or ERC-1155 (open editions).
